This week I will be showing you how to make a berry cobbler using  Mad Dash Mixes’ Fruit Cobbler mix. The cobbler can be made with any type of fruit.  I wanted to try blueberries this time since I had made one using apples previously.

What is a cobbler, exactly?  A cobbler is a baked dessert containing some sort of fruit; fresh , frozen, dried or even canned fruit can be used to make a cobbler.   A cobbler has a topping that is either made from cake batter, cookie dough, biscuits or dumplings.   It can be served with ice cream, whipped cream or plain.

How to Make Blueberry Cobbler

Since I had a bag of frozen blueberries in the freezer, I decided to make a blueberry cobbler this morning.  Using the Mad Dash Fruit Cobbler mix, I only needed to gather the following ingredients: butter, milk and the berries.

If you are going to use frozen fruit to make this cobbler, please make sure the fruit is completely thawed before adding to the pan.  I chose blueberries this time, but I plan to make it again using a different berry, possible even a triple berry blend!

This fall, I think I will also try it using dried apricots just to see how it works out.

Back to Mixin’….

Preheat the oven to 350 degrees.  You will need a 9 x 13 pan to bake the cobbler in.  Once the oven was preheated, I put the stick of butter (wrapper removed of course) in the pan and put the pan in the oven for just under 2 minutes.  This way, I didn’t have to use  another dish to melt the butter in.  One less dish to wash!   I set the pan on the stove top until I was ready to fill it.

If you are going to use frozen fruit to make this cobbler, please make sure the fruit is completely thawed before proceeding. I did remove some of the excess liquid after the blueberries were thawed.

After thawing the blueberries,  I added the contents of the fruit packet to the berries.  Simply sprinkle the contents of the packet marked Fruit Mix over the berries and stir. Set mixture aside .

In a mixing bowl, combine the contents of the Batter mix packet with 3/4 cup milk.  Stir till well blended.

Now you are ready to pour the batter into your 9 x 13 pan.  Do not stir the batter once it is in the pan.  Next, spoon the berry mixture over the batter.

Bake for 1 hour at 350 degrees.  Remove from oven and let cool before serving.

Ready to Eat!

After the cobbler has cooled, spoon some into a serving dish.  The cobbler can be enjoyed topped with ice cream or whipped topping .  It can even be served without a topping!

So Berry Good Blueberry Cobbler

Equipment

  • 9 x 13 baking pan
  • mixing bowls
  • measuring cups
  • spatula
  • wooden spoon
  • cooling rack
  • hot pads

Ingredients
  

  • 1 package Mad Dash Mixes Fruit Cobbler Mix contains Batter Mix and Fruit Mix packets
  • 2 cups fresh or frozen fruit of your choice I chose blueberries
  • 3/4 cup milk
  • 1/2 cup butter

Instructions
 

  • Preheat Oven to 350 degrees
  • melt butter in 9 x 13 pan in oven for approximately 2 minutes. Remove from oven and set aside
  • Sprinkle the contents of the Fruit Mix packet over the blueberries. Stir. Set aside

  • In a mixing bowl, combine the Batter mix with 3/4 cup of milk. Stir until well blended.

  • Pour the batter into the 9 x 13 pan. Do Not Stir the batter once it is in the pan.
  • Spoon the fruit mixture evenly over the batter

  • Bake for 1 hour at 350 degrees
  • After baking, set on a cooling rack and let cool for a bit.

  • to serve, cut into squares and serve in a bowl with vanilla ice cream, whipped cream or plain.

  • Store any remaining cobbler in the refrigerator.

Notes

Left over cobbler should be stored in the refrigerator.  
Cobbler can be served with ice cream, whipped cream or served plain. 
Most any type of fruit can be used.  If using frozen fruit, make sure it is complete thawed before adding it to the pan.
