This week I am sharing how to prepare Red Beans & Rice using a Mad Dash Mixes mix.  This is another of their great mixes that is easy to make and tasty too!  Red Beans & Rice is a perfect dish to prepare for an easy weekend meal .  I did add sausage to the Red Beans & Rice but you could make the dish without it.

Red Beans & Rice with Sausage

a hearty soup with smoked sausage, red beans & rice

Prep Time 10 minutes mins
Cook Time 40 minutes mins

Servings 6 servings

Equipment

  • dutch oven or large stock pot
  • measuring cups
  • wooden spoon

Ingredients
  

  • 1 packet Red Beans & Rice by Mad Dash Mixes
  • 2 cups water
  • 16 oz smoked sausage, sliced
  • 2 cans Dark Kidney beans, drained & rinsed

Instructions
 

  • Drain & Rinse 2 cans of Kidney Beans and add them to the stock pot
    straining the liquid off of red beans
  • then add the seasoning mix packet and the rice packet to the kidney beans & stir until blended
    Stirring in the seasoning mix to the Red Beans & Rice
  • Add 2 cups water and bring to a rolling boil, stirring occasionally

  • Add the smoked sausage, reduce heat, cover and simmer for 20 to 25 minutes until the rice is tender. Stir occassionally

  • Once the rice is tender, there still may be extra liquid in the pot. This is normal.

  • Serve the Red Beans & Rice with Sausage in a bowl

Notes

If desired, the sausage can be left out of the recipe.
