WELCOME TO MIX IT UP MONDAY WITH MAD DASH MIXES

WEEK 82

WHAT ARE WE MIXIN’ UP THIS WEEK?

Vintage Hamilton Beach Stand Mixer

This week, I am sharing a very quick Chicken Chile Verde recipe.  Chicken Chile Verde is a dish from northern Mexican. All you need is a packet of Chicken Chile Verde Mix from our friends at Mad Dash Mixes and 3 other ingredients! In roughly 40 minutes, you will have a delicious entree to serve your family!

Chicken Chili Verde ingredients

Let’s Get to Mixin’!

To make this delicious Mexican Stew, you will need the Chicken Chile Verde mix from Mad Dash Mixes, chicken broth or water, diced potatoes and shredded chicken.  The recipe calls for 5 cups of water but I used a combination of chicken broth and water, similar to the recipe my friend Leslie prepared on her blog Feet under My Table.    I think using Chicken broth gives the stew a bit more body or thickness.

The Steps

After combining the seasoning mix with the liquid, diced potatoes & shredded chicken, bring the stew to a boil and then reduce the heat to low and simmer for 20 minutes. It is that simple! Please remember to stir the soup occasionally while it is simmering.

After the stew has simmered for 20 minutes, you are ready to ladle it into a bowl, cup or mug.  Feel free to be creative with toppers for your stew.  Sour cream, shredded cheese and guacamole are some suggestions.  Tortilla chips or corn chips could also be used as a topper.  I love to add the blue corn chips for a bit of color.

Another Serving Idea

The stew can be served with a side of rice, black beans or red beans, or warm tortillas.  The next time I make it, I am going to serve it with a side of the pineapple salsa  to add a bit of spicy sweetness!

COOKING WITH KIM

My entrepreneurial journey started with my love of herbs , both growing and cooking with them.  My love of herbs eventually led to owning a pizzeria. After relocating to Florida, I decided to start a blog where I could share my love of cooking, decorating and crafting.
Throughout my culinary career, I have discovered the using mixes can make a cook’s life so much easier!  Using a mix to make a recipe is as simple as adding a few ingredients to the mix and then stirring, cooking or chilling and serving!   Mixes are such a time saver!  After meeting the ladies from Mad Dash Mixes* at a blogging conference this summer, I decided to add a weekly blog post featuring recipes using their mixes.  Now I am now having a lot of fun working with the ladies from Mad Dash Mixes. They did send me some products to sample but my opinions about the products are my own.  My full disclosure policy can be found on the Disclosure page.
A gift basket of assorted mixes, a couple of colorful kitchen towels and a wooden spoon or measuring cups would make a great housewarming gift or bridal shower gift.
*If you would like to try some of their products, I have arranged for you to receive a 15% discount if you use the code farmhouse.  Orders can be placed at http://www.MadDashMixes.com
