Quick & Easy Chicken Chili Verde

This week, I am sharing a very quick Chicken Chile Verde recipe.  Chicken Chile Verde is a dish from northern Mexican. All you need is a packet of Chicken Chile Verde Mix from our friends at Mad Dash Mixes and 3 other ingredients! In roughly 40 minutes, you will have a delicious entree to serve your family!

Let’s Get to Mixin’!

To make this delicious Mexican Stew, you will need the Chicken Chile Verde mix from Mad Dash Mixes, chicken broth or water, diced potatoes and shredded chicken.  The recipe calls for 5 cups of water but I used a combination of chicken broth and water, similar to the recipe my friend Leslie prepared on her blog Feet under My Table.    I think using Chicken broth gives the stew a bit more body or thickness.

The Steps

After combining the seasoning mix with the liquid, diced potatoes & shredded chicken, bring the stew to a boil and then reduce the heat to low and simmer for 20 minutes. It is that simple! Please remember to stir the soup occasionally while it is simmering.

After the stew has simmered for 20 minutes, you are ready to ladle it into a bowl, cup or mug.  Feel free to be creative with toppers for your stew.  Sour cream, shredded cheese and guacamole are some suggestions.  Tortilla chips or corn chips could also be used as a topper.  I love to add the blue corn chips for a bit of color.

Another Serving Idea

The stew can be served with a side of rice, black beans or red beans, or warm tortillas.  The next time I make it, I am going to serve it with a side of the pineapple salsa  to add a bit of spicy sweetness!

Chicken Chili Verde

A hearty chicken stew featuring diced potatoes & green chilis

Equipment

  • measuring cups
  • saucepan
  • wooden spoon
  • serving bowl

Ingredients
  

  • 1 packet Chicken Chile Verdi mix by Mad Dash Mixes
  • 1 cup cold water
  • 4 cups chicken broth
  • 1 cup diced potato I used baby gold potatoes
  • 2 cups cooked chicken diced or shredded

Instructions
 

  • Combine diced potatoes, shredded chicken and the Chicken Chili Verde mix in saucepan

  • Add 5 cups liquid (I used 4 cups chicken broth & 1 cup water). Stir to combine ingredients

  • Bring to a boil, stirring occasionally. As soon as the stew begins to boil, reduce heat.

  • Simmer over low heat for 20 minutes. Stir the soup occasionally.

Notes

Toppers can be added to the stew to add additional flavor.  Suggested toppings include sour cream, shredded cheese and cilantro.  Blue corn chips, tortilla chips,and guacamole are some other options.

I don’t talk about my faith a lot. I do believe I don’t talk about my faith a lot.  I do believe God puts certain people in your path for a reason.  An example of this occurred on Tuesday.  It was colonoscopy/sigmoidoscopy day.  I was really nervous about how it would all work since it was my first time since I had my cancer surgery. 

 The nurse that was taking care of me in the pre op area turned out to be the same nurse who had prayed for me last year. My husband was in the parking lot of the medical center speaking with his friend who happened to work at the center with this particular nurse. I was very sick at the time and they prayed for my healing.  It was great to be able to thank her in person and let her see that the prayers had been answered. ❤️

Then the anesthesiologist came in and told me about his cousin who had also been diagnosed with Stage 4 colon cancer about a year ago. He mentioned some of the treatments his cousin had had and how important a positive attitude is.  I was touched that he took the time to tell me about his cousin’s experience. 

 We had arranged in advance to have my husband’s friend as the nurse anesthesist.  He was able to pray with us as well as reassure us about the procedure.

The procedure went well. The three polyps that the surgeon removed were sent to pathology.  The report is already back and there no evidence of cancer.  Prayers were answered again❤️
