Welcome to Week 4 of Mix It Up Monday with Mad Dash Mixes!

No Bake Chocolate Chip Cheesecake ingredients

This week I am highlighting one of the company’s no bake cheesecake mixes!   After I met the ladies behind Mad Dash Mixes at a conference in Mid July, I decided that a weekly blog post featuring one of their recipes would be a lot of fun to do!  I did receive some product from Mad Dash Mixes in order to test out their line but any opinions expressed are my own.  My full disclosure policy can be found on the Disclosure page.

If you have been following me for a bit, you know that I love chocolate!  In fact, the concept behind my “dream” restaurant featured a flourless chocolate cake!  While I didn’t get to realize that dream, more about my entrepreneurial journey can be found here:

The company has several different no bake cheesecake mixes available.  I decided to try the Chocolate Chip Cheesecake one first!

Pictured above are the ingredients you will need in addition to their Cheesecake Mix packet.  If you are interested in purchasing any of their products, use the code  farmhouse to receive 15% off your order at www.MadDashMixes.com

Ingredients:

2  8 oz Softened Cream Cheese ( I used the lower fat option)

1 8 oz Cool Whip or similar whipped topping

1 8 inch Oreo Cookie Crust

1 Mad Dash Mix No Bake Chocolate Chip Cheesecake Mix packet

The Mixing Process

Vintage Hamilton Beach Stand Mixer with shaker

I decided to use my Mom’s vintage Hamilton Beech Stand Mixer.  You can use an electric hand mixer or even mix the ingredients by hand.

After the cream cheese has softened, add it to your mixing bowl.  Then add the Cheesecake Mix.  Blend until the cream cheese is very creamy.  Fold in your Cool Whip or other whipped Topping.

Chill before Serving

The cheesecake will be easier to cut into slices if it is given a chance to chill.  I added a few thin Oreo Cookies to the top as a decoration!

Alternate Serving Ideas

Instead of filling a pie crust, the prepared no bake cheesecake can be served in a bowl as a dip for fresh fruit or cookies.

A plain graham cracker crust could be used in place of the Oreo cookie crust.  They even make a ready-made graham cracker crust that has pecans in it!  I think that would be really delicious!  I will have to try that one soon!

If you want to make individual cheesecakes, Keebler makes a package of 6 mini graham cracker crusts.

Seventeen years ago today, I volunteered on the Ex Seventeen years ago today, I volunteered on the Extreme Makeover: Home Edition build in Philo, Illinois — a day that still feels as vivid as ever.

From prepping pots at the shop to seeing the landscaping come together, to standing off to the side during the reveal… it was one of those rare experiences where community, generosity, and purpose all collide in the best possible way.

There’s a photo in here of me with Will and Debbie — two wonderful people who volunteered alongside me that day. Will always wore those sunglasses; I still can’t see the sunglasses emoji without thinking of him. Both have since passed, and that picture has become a little treasure from a day we shared together.

I added a few newly rediscovered photos to my blog post this year, and it reminded me how meaningful it was to be part of something hopeful and lasting.

I pulled together this simple patriotic vignette with vintage touches, soft blues, and a few gentle pops of red. It’s amazing how a little fabric, a postcard, and a favorite finial can turn into something sweet for summer.

If you love soft Americana style, this one’s for you. ❤️🤍💙
