Key Lime Holiday Cheesecake Wraps

With Christmas and all the winter holidays just around the corner, I have been looking for quick & easy festive dessert ideas! I’d love to show you how easy it is to prepare Key Lime Holiday Cheesecake wraps!

A Little Background Before We Get Started-

I spent a little thyme in the test kitchen this summer adapting a recipe or two.  For the cheesecake wraps, I used a recipe that was originally shared by the University of Nebraska – Lincoln.  It was included in the Piatt Co Illinois Home Extension newsletter in May.

Are you familiar with Home Extension?  The short answer is it is part of the land grant university system.  4-H falls under the Extension service.  Being involved in 4-H when I was growing up is one of the reasons I have the knowledge and the ability to share that knowledge with all of you!  I will share more about the programs that the Extension services offer at a later time!

Let’s Get To Mixin’

Key Lime Pie Cheesecake ingredients

Pictured above are the ingredients you will need in order to make the Key Lime Holiday Cheesecake filling.

Ingredients:

2 8 oz Softened Cream Cheese (I used the lower fat option)

1 8 oz Cool Whip or similar whipped topping

1 Mad Dash Mix No Bake Key Lime Cheesecake Mix packet

You will also need soft tortillas.  I used the snack size ones for this recipe.

The Mixing Process

You can use an electric hand mixer, stand mixer or even mix the ingredients by hand.  I normally use my Mom’s vintage Hamilton Beach Stand Mixer.

After the cream cheese has softened, add it to your mixing bowl.  Then add the Cheesecake Mix.  Blend until the cream cheese is very creamy.

Next you will fold in your Cool Whip or other whipped Topping.

After you have folded in the whipped topping, the cheesecake filling is ready.

Preparing the Wraps

Once the Cool Whip is folded in, you are ready to prepare the wraps.

Place one of the snack sized tortillas on a flat surface.  I used a small pizza peel.  Spread the  Cheesecake filling on the tortilla.  Make sure you get as close to the edge as possible.

Roll the tortilla up.  If you aren’t serving them immediately,  place in a storage container and refrigerate until ready to serve.

Repeat the process  until you have 8 wraps.  You will have some cheesecake filling left over.  This filling can be used as a dip or you could use it to fill a 4 pack of mini graham cracker crusts.  You could also make more wraps if you would like.  Chill the wraps until you are ready to serve them.

To serve, place the wrap on a plate.  Garnish with whipped topping and nonpareils. Enjoy!

Key Lime Holiday Cheesecake Wraps

Equipment

  • mixing spoon
  • measuring cup
  • mixing bowl
  • storage container
  • pizza peel or other flat surface used to prepare the wrap

Ingredients
  

  • 16 oz Cream Cheese, Softened low fat cream cheese can be used
  • 8 oz Cool Whip other brands of whipped topping can be used
  • 1 packet Key Lime Pie No Bake Cheesecake Mix by Mad Dash Mixes
  • 8 snack size tortillas
  • whipped topping in a can
  • Nonpareils or sprinkles

Instructions
 

  • Add softened cream cheese and the Cheesecake Mix in a bowl. Blend until Creamy

  • Fold in Cool Whip or other whipped topping

  • Gently Spread cheesecake filling over one of the snack size tortillas, make sure you spread the filling almost to the edge

  • roll the tortilla up and store in a container . Place the tortilla seam side down in the container, Chill until ready to serve.

  • repeat process until you have 8 filled tortillas. Use the remaining cheesecake filling as a dip for fruit or use it to fill mini graham cracker crusts.
  • To serve, place the wrap on a plate. Add Whipped topping to the top of the wrap and sprinkle nonpareils over the whipped topping. Enjoy!

Notes

Refrigerate any leftovers.  The wraps should be stored in a covered container.

I don’t talk about my faith a lot. I do believe I don’t talk about my faith a lot.  I do believe God puts certain people in your path for a reason.  An example of this occurred on Tuesday.  It was colonoscopy/sigmoidoscopy day.  I was really nervous about how it would all work since it was my first time since I had my cancer surgery. 

 The nurse that was taking care of me in the pre op area turned out to be the same nurse who had prayed for me last year. My husband was in the parking lot of the medical center speaking with his friend who happened to work at the center with this particular nurse. I was very sick at the time and they prayed for my healing.  It was great to be able to thank her in person and let her see that the prayers had been answered. ❤️

Then the anesthesiologist came in and told me about his cousin who had also been diagnosed with Stage 4 colon cancer about a year ago. He mentioned some of the treatments his cousin had had and how important a positive attitude is.  I was touched that he took the time to tell me about his cousin’s experience. 

 We had arranged in advance to have my husband’s friend as the nurse anesthesist.  He was able to pray with us as well as reassure us about the procedure.

The procedure went well. The three polyps that the surgeon removed were sent to pathology.  The report is already back and there no evidence of cancer.  Prayers were answered again❤️
