Chicken Chili Verde

- 1 packet Chicken Chile Verdi mix by Mad Dash Mixes
- 1 cup cold water
- 4 cups chicken broth
- 1 cup diced potato I used baby gold potatoes
- 2 cups cooked chicken diced or shredded
Combine diced potatoes, shredded chicken and the Chicken Chili Verde mix in saucepan
Add 5 cups liquid (I used 4 cups chicken broth & 1 cup water). Stir to combine ingredients
Bring to a boil, stirring occasionally. As soon as the stew begins to boil, reduce heat.
Simmer over low heat for 20 minutes. Stir the soup occasionally.
serve in a soup bowl, mug or cup. Top with toppers of your choice
a few options for toppers
Toppers can be added to the stew to add additional flavor. Suggested toppings include sour cream, shredded cheese and cilantro. Blue corn chips, tortilla chips,and guacamole are some other options.
