A Little History About Wacky Cake
Wacky cake is known by a couple of other names: crazy cake & depression cake. The cake recipe has an interesting history. In place of butter & eggs, vinegar and baking soda were used instead! Yes, vinegar!

By replacing the eggs & butter with vinegar and baking soda, the cake turns out very moist. It was so delicious, people didn’t even miss the eggs & butter! Wacky Cake or Krazy Kake ( as I like to call it!) is still popular today.
The Ingredients That Make It Unique
What sets this cake recipe apart from other desserts is its unique combination of ingredients. Instead of using eggs and butter, it relies on vinegar and baking soda to create a light and fluffy texture. The addition of cocoa powder gives it a rich chocolate flavor, while the use of vegetable oil keeps it moist and tender. It’s a perfect option for those with dietary restrictions or for anyone looking for a deliciously unique dessert.
How to Make Wacky Cake
Making Wacky Cake is so very easy. All you need is a few basic ingredients: flour, sugar, cocoa powder, baking soda & salt as well as vanilla extract, vegetable oil and vinegar. My recipe uses herbal vinegar in place of the white vinegar. Learn more about herbal vinegar and other herbal condiments here:Make Your Own Herbal Condiments
Don’t forget to preheat your oven to 350°F. Line a 9 inch round baking pan with parchment paper.
If you prefer, you can use an 8 x 8 square pan, lined with parchment paper.
In a large mixing bowl, combine 1 1/2 cups of all-purpose flour,1 cup of sugar, 1/4 cup of cocoa powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix well.
Next make three wells or indentations in the dry ingredients. In one well, add 1 teaspoons of vanilla extract, in another well add 1 tablespoon of herbal vinegar, and in the final well add 1/3 cup of vegetable oil. Pour 1 cup of water over the entire mixture and stir until well combined.
Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving and enjoy your scrumptiously unique wacky cake!

Oh my Kim! YUM!!! I have been going through my grandmother’s recipes, there are literally thousands… I did see something about depression cake, but I do not think it was like this one. I am adding this to my recipe box to see if I can make it gluten free for me! It sounds delicious, and I love using unique ingredients. Vinegar and baking soda? Why not! Thank you so much for sharing with Whimsy Home Wednesday!
