Do you love nut bread?  I do!  Today I am preparing Pecan Banana Bread using Mad Dash Mixes Mini Pecan Pie Muffin mix!  I wanted to share how versatile this mix is!  This mix can be mixed up and baked in a mini muffin tin, a regular size muffin tin or even a loaf pan. There are even a few more additional recipes on the Mad Dash Mix website.   Just like the name says, the prepared mix taste just like pecan pie!

Pecan Banana Bread can be baked for a special treat for your family’s breakfast!  Or you could prepare a few loaves in advance and freeze them to give as hostess gifts during the holiday season!

Pecan Banana Bread

A sweet tasting banana bread with pecans added in.

Cook Time 45 minutes mins
cooling time 10 minutes mins
Total Time 1 hour hr 10 minutes mins

Equipment

  • mixing bowl
  • measuring cups
  • spatula
  • wooden spoon
  • loaf pan 8 1/2 x 4 1/2 size
  • 1 cutting board

Ingredients
  

  • 1 packet Mini Pecan Pie Mix by Mad Dash Mixes
  • 2 eggs
  • 1/2 stick butter melted
  • 3/4 cup chopped pecans
  • 1 ripe banana, mashed
  • cooking spray with flour added

Instructions
 

  • gather ingredients, preheat oven to 350 degrees
    muffin mix and ingredients
  • mash one ripe banana
    preparing ripe banana to add to banana bread batter
  • In a mixing bowl, beat eggs with a fork
    clear glass bowl with beaten eggs
  • Add the contents of the packet of muffin mix to the beaten eggs and mix well
    muffin mix with beaten eggs
  • Add melted butter to the batter in the bowl, mix well
    muffin mix, eggs & butter in glass bowl
  • add the mashed banana to the batter and mix well
    ripe banana mashed, ready to use
  • Add pecans to batter and blend well
    muffin mix with pecans
  • spray the loaf pan with the cooking spray. If you don't have cooking spray with flour , you can use a kitchen spritzer with oil and then dust the pan with flour
  • Fill the loaf pan 1/2 of the way full with the batter.
  • Bake the pecan banana bread at 350 for 45 minutes. Test with a toothpick . The toothpick will come out clean when the bread is done

  • Cool for about 10 minutes and then remove the banana bread from the pan. . Finish cooling the pecan banana bread on a rack . Slice and serve
