Mad Dash Mixes Tortilla Soup with Chicken

A tasty Tortilla Soup ready in less than an hour! A mix from Mad Dash mixes, chicken and assorted toppings make it extra delicious!

I  gathered the basic ingredients that I will need.  Since I have some corn in the freezer, I am going to use that in place of the canned corn.  I also have some diced chicken in the freezer, so I will add it as well.

Let’s Get to Mixin’!

To make the soup, you will need the Tortilla Soup mix from Mad Dash Mixes, water, diced tomatoes, canned or frozen corn.  To make it extra hearty, diced chicken and zucchini can be added.  I did not have any zucchini so I didn’t use it when I made the soup.

The Steps

After combining the soup mix with the water, diced tomatoes and corn, bring the soup to a boil. If using corn and zucchini, add it now.  Stir occasionally.  After the soup boils, reduce the heat to low, simmer for 15 minutes.  Please remember to stir the soup occasionally while it is simmering.

Ready to Serve

Condiment topped Tortilla Soup

Tortilla chips or corn chips add a crunchy topping to the soup.  Using the blue corn chips adds color to the soup.  A dollop of sour cream, shredded cheese or even Guacamole could be added to the soup.  It is fun to experiment with the different toppings!  We used blue corn chips, guacamole and shredded cheese to top our soup.  My husband said this soup was excellent!

Avocado slices and black olives can also be used as toppings for this delicious soup.

Ingredients for Mad Dash Mixes Tortilla Soup

Tortilla Soup with Chicken

Cook Time 40 minutes mins

Equipment

  • dutch oven or large saucepan
  • measuring cups
  • wooden spoon

Ingredients
  

  • 1 packet Tortilla Soup Mix Packet by Mad Dash Mixes
  • 5 cups water
  • 1 can diced tomatoes 15 ounce can
  • 1/2 can corn drained
  • 2 cups cooked, diced chicken canned chicken can be substituted (optional)
  • 1 cup zucchini diced (optional)
  • assorted toppings shredded cheese, corn chips, tortilla chips, avocado slices, guacamole, sour cream are some suggestions

Instructions
 

  • Add the Soup Mix packet to 5 cups of water in a large saucepan or dutch oven
  • then add the diced tomatoes & corn to the saucepan or Dutch oven
    first 4 ingredients for Tortilla Soup
  • If adding chicken and/or zucchini, add it now. Stir well

  • Bring to a rolling boil, stirring occasionally. Reduce heat

  • Simmer for 15 minutes. Stir occasionally
    ladling soup into a mug
  • prepare an assortment of toppings

Notes

One cup of frozen corn can be substituted for the 1/2 can of canned corn
sliced avocado and black olives can also be used as a topping for this soup
