Black Bean Slow Cooker Chili

This chili recipe is so quick and easy to prepare. With a little advance preparation, you can have this crock pot chili cookin’ in no thyme!

This week I am sharing a Chili recipe that I adapted in order to prepare it in my crock pot.  My Hamilton Beach crock watcher is my all time favorite kitchen appliance!  I love to be able to add all my ingredients in one pot, plug the unit in, turn it on and walk away.  In a few hours, the food is ready to eat!  Clean up is a breeze too! This model has a ceramic insert that lifts out for easy cleaning.

Let’s Get to Mixin’!

Before we get into the specifics of the recipe,  I would like to talk about the advance preparation that you can do to make this Chili recipe quick & easy to prepare.  To save time, I will brown & drain 2 pounds of ground beef ahead of time and then freeze  1/2 of it in a freezer grade plastic bag.  I will go ahead and use the other half to make spaghetti sauce or tacos.  Then when I am ready to make the Black Bean Slow Cooker Chili, I can just thaw out the 1 pound bag of ground beef.  Of course, if you don’t have the prepared ground beef in your freezer, you can brown and drain it right before adding it to the crock pot.

Preparing a variety of soups and Chilis is easy to do if you keep staples such as Black Beans (or pinto beans) and diced tomatoes in your pantry.  These items can be used in a number of different recipes.  I usually have at least 4 cans of each on my pantry shelves.

Kim's Black Bean Slow Cooker Chili

advance prep - brown , drain & freeze ground beef 20 minutes mins
Total Time 4 hours hrs 35 minutes mins

Equipment

  • slower cooker or Crock pot
  • measuring cups
  • wooden spoon

Ingredients
  

  • 5 tablespoons Chili Mix (1/2 packet) by Mad Dash Mixes
  • 1/2 cup water
  • 1 pound ground beef prepared in advance
  • 1 can diced tomatoes
  • 1 can Black Beans, drained & rinsed can use Kidney Beans or Pinto Beans if you prefer
  • 1 can pan spray to help keep the chili from sticking to the sides of the slow cooker. Use only what is needed to lightly coat the inside of the slow cooker

Instructions
 

  • Spray the inside of the slow cooker with pan spray. Add one can of diced tomatoes to the slow cooker.

  • Add 1 pound of browned ground beef to the diced tomatoes. Stir the ingredients together. If using already browned ground beef that has been frozen, thaw it out ahead of time.

  • Add 1/2 cup water and stir
    3 of the ingredients for Crock pot Chili
  • Drain & Rinse 1 can of Black Beans and add to the slow cooker

  • Add 5 Tablespoons of the Chili Mix to the ingredients in the slow cooker

  • Mix all ingredients together in the slow cooker, plug in and turn to low.

  • cook on low for 4 to 5 hours.

  • Prepare bowls of assorted toppings for the Chili . Toppings can include shredded cheese, sour cream and corn chips. If your family likes black olives, they could be used also

  • serve in bowls and let everyone add toppings to their own bowl

I don’t talk about my faith a lot. I do believe I don’t talk about my faith a lot.  I do believe God puts certain people in your path for a reason.  An example of this occurred on Tuesday.  It was colonoscopy/sigmoidoscopy day.  I was really nervous about how it would all work since it was my first time since I had my cancer surgery. 

 The nurse that was taking care of me in the pre op area turned out to be the same nurse who had prayed for me last year. My husband was in the parking lot of the medical center speaking with his friend who happened to work at the center with this particular nurse. I was very sick at the time and they prayed for my healing.  It was great to be able to thank her in person and let her see that the prayers had been answered. ❤️

Then the anesthesiologist came in and told me about his cousin who had also been diagnosed with Stage 4 colon cancer about a year ago. He mentioned some of the treatments his cousin had had and how important a positive attitude is.  I was touched that he took the time to tell me about his cousin’s experience. 

 We had arranged in advance to have my husband’s friend as the nurse anesthesist.  He was able to pray with us as well as reassure us about the procedure.

The procedure went well. The three polyps that the surgeon removed were sent to pathology.  The report is already back and there no evidence of cancer.  Prayers were answered again❤️
