Grilled Pork Roast with Texas BBQ Rub

This week, I am showcasing Mad Dash Mixes Texas BBQ seasoning.  The company offers 4 different meat seasonings: Caribbean Jerk, Texas BBQ, Fajita Rub and Steakhouse Seasoning.  I am going to use the Texas BBQ seasoning as a rub on a pork roast before we grill it.

Let’s Get to Mixin’

The Texas BBQ Seasoning can be used as a dry rub by coating the sides of your choice of meat with about 1 tablespoon of the Texas BBQ Seasoning blend.  Before sprinkling the meat with the BBQ seasoning, first coat both sides of the roast with olive oil.  Then sprinkle at least 1 tablespoon of the Texas BBQ seasoning on the top of the pork roast and then rub into the meat.  Turn the meat oven, and repeat.  Let the coated meat stand at room temperature for about 30 minutes to allow the seasoning time to soak into the meat.  The coated meat can also be placed in the refrigerator for several hours and allowed to marinate.  Once the meat has had time to marinate, it is ready to be cooked.

We cooked the pork roast on our Big Green Egg for approximately 1 hour at 325 degrees.  You want to cook the meat until the internal temperature reaches at least 170 degrees.

Pork Roast with Texas BBQ Rub

Equipment

  • 1 measuring spoons
  • 1 glass or plastic pan to marinate
  • charcoal or gas grill
  • cutting board

Ingredients
  

  • 2 tbsp Texas BBQ seasoning by Mad Dash Mixes
  • 2 tbsp olive oil extra virgin
  • 2 1/2 lb pork roast

Instructions
 

  • pour olive oil on one side of pork roast , covering the top and the sides
    pouring olive oil on roast
  • sprinkle at least 1 tablespoon Texas BBQ seasoning over the top of the meat, rub in
    rubbing seasoning on by hand
  • flip meat over and repeat the olive oil and Texas BBQ seasoning steps. Be sure to coat the sides of the meat also.

  • allow the meat to marinate at room temperature for at least 30 minutes or in the refrigerator for several hours.
  • place meat on grill, right over the flame and sear each side for 2 minutes. Then move meat farther away from the flames and continue to cook for approximately 1 hour.
  • Meat is cooked when the internal temperature reaches at least 170. Use a meat thermometer to check the temperature

  • remove from heat and place on cutting board. Allow to cool slightly before slicing

Notes

Alternate Cooking Method: after roast has finished marinating, brown roast on each side in a hot skillet.  Transfer meat to a covered roasting pan and roast in an 325 degree oven for one hour or until the internal temperature of the roast reaches 170 degrees.  Use a meat thermometer to check the temperature.

I don’t talk about my faith a lot. I do believe I don’t talk about my faith a lot.  I do believe God puts certain people in your path for a reason.  An example of this occurred on Tuesday.  It was colonoscopy/sigmoidoscopy day.  I was really nervous about how it would all work since it was my first time since I had my cancer surgery. 

 The nurse that was taking care of me in the pre op area turned out to be the same nurse who had prayed for me last year. My husband was in the parking lot of the medical center speaking with his friend who happened to work at the center with this particular nurse. I was very sick at the time and they prayed for my healing.  It was great to be able to thank her in person and let her see that the prayers had been answered. ❤️

Then the anesthesiologist came in and told me about his cousin who had also been diagnosed with Stage 4 colon cancer about a year ago. He mentioned some of the treatments his cousin had had and how important a positive attitude is.  I was touched that he took the time to tell me about his cousin’s experience. 

 We had arranged in advance to have my husband’s friend as the nurse anesthesist.  He was able to pray with us as well as reassure us about the procedure.

The procedure went well. The three polyps that the surgeon removed were sent to pathology.  The report is already back and there no evidence of cancer.  Prayers were answered again❤️
