WELCOME TO MIX IT UP MONDAY WITH MAD DASH MIXES

WEEK 111

WHAT ARE WE MIXIN’ UP THIS WEEK?

Vintage Hamilton Beach Stand Mixer

Nothing beats a warm, hearty soup on a cold day! We are experiencing a drop in our evening temperatures this week, so I decided to prepare Tortilla Soup using one of the mixes from Mad Dash Mixes.  If you would like to try some of their products, I have arranged for you to receive a 15% discount if you use the code farmhouse.  Orders can be placed at http://www.MadDashMixes.com

I  gathered the basic ingredients that I will need.  Since I have some corn in the freezer, I am going to use that in place of the canned corn.  I also have some diced chicken in the freezer, so I will add it as well.

Let’s Get to Mixin’!

To make the soup, you will need the Tortilla Soup mix from Mad Dash Mixes, water, diced tomatoes, canned or frozen corn.  To make it extra hearty, diced chicken and zucchini can be added.  I did not have any zucchini so I didn’t use it when I made the soup.

The Steps

After combining the soup mix with the water, diced tomatoes and corn, bring the soup to a boil. If using corn and zucchini, add it now.  Stir occasionally.  After the soup boils, reduce the heat to low, simmer for 15 minutes.  Please remember to stir the soup occasionally while it is simmering.

Ready to Serve

Tortilla chips or corn chips add a crunchy topping to the soup.  Using the blue corn chips adds color to the soup.  A dollop of sour cream, shredded cheese or even Guacamole could be added to the soup.  It is fun to experiment with the different toppings!  We used blue corn chips, guacamole and shredded cheese to top our soup.  My husband said this soup was excellent!

Avocado slices and black olives can also be used as toppings for this delicious soup.

My recipe for the Guacamole dip can be found here: Guacamole With Tortilla Chips

COOKING WITH KIM

My entrepreneurial journey started with my love of herbs, both growing and cooking with them.  My love of herbs eventually led to owning a pizzeria.
Makin' Pizza Sign
After relocating to Florida, I decided to start a blog where I could share my love of cooking, decorating, crafting and growing things, of course!
Throughout my culinary career, I have discovered the using mixes can make a cook’s life so much easier!  Using a mix to make a recipe is as simple as adding a few ingredients to the mix and then stirring, cooking or chilling and serving!   Mixes are such a time saver!
After meeting the folks from Mad Dash Mixes* at a blogging conference one summer, I decided to add a weekly blog post featuring recipes using their mixes.  Now I am now having so much fun working with the people from Mad Dash Mixes. They did send me some products to sample but my opinions about the products are my own.  My full disclosure policy can be found on the Disclosure page.
The mixes make great gifts!  A gift basket of assorted mixes, a couple of colorful kitchen towels and a wooden spoon or measuring cups would make a great housewarming gift or bridal shower gift.
