This week I will be showing you how to make apple cobbler using a Mad Dash Mix.  If you don’t have any apples on hand, almost any fruit can be used with the cobbler mix.

Culinary mixes can make a cook’s life so much easier!  Using a mix to make a recipe is as simple as adding a few ingredients to the mix and then stirring, cooking or chilling and serving!  After meeting the ladies from Mad Dash Mixes* at a blogging conference this summer, I decided to add a weekly blog post featuring recipes using their mixes.

How to Make Apple Cobbler using a Mad Dash Mix

Equipment

  • 9 x 13 baking pan
  • mixing bowls
  • measuring cups
  • spatula
  • wooden spoon
  • cooling rack
  • hot pads

Ingredients
  

  • 1 package Mad Dash Mixes Fruit Cobbler Mix contains Batter Mix and Fruit Mix packets
  • 2 cups fresh or frozen fruit of your choice I chose apples
  • 3/4 cup milk
  • 1/2 cup butter
  • lemon juice

Instructions
 

  • Preheat Oven to 350 degrees
  • melt butter in 9 x 13 pan in oven for approximately 2 minutes. Remove from oven and set aside
  • after washing apples, chop into small pieces. Sprinkle lemon juice over the chopped apples to prevent them from turning brown.
  • Sprinkle the contents of the Fruit Mix packet over the chopped apples. Stir. Set aside
  • In a mixing bowl, combine the Batter mix with 3/4 cup of milk. Stir until well blended.
  • Pour the batter into the 9 x 13 pan. Do Not Stir the batter once it is in the pan.
  • Spoon the fruit mixture evenly over the batter
  • Bake for 1 hour at 350 degrees
  • After baking, set on a cooling rack and let cool for a bit.
  • to serve, cut into squares and serve in a bowl with vanilla ice cream, whipped cream or plain.
  • Store any remaining cobbler in the refrigerator.

Notes

Left over cobbler should be stored in the refrigerator.  
Cobbler can be served with ice cream, whipped cream or served plain. 
Most any type of fruit can be used.  If using frozen fruit, make sure it is complete thawed before adding it to the pan.

What is a cobbler, exactly?  A cobbler is a baked dessert containing some sort of fruit; fresh , frozen, dried or even canned fruit can be used to make a cobbler.   A cobbler has a topping that is either made from cake batter, cookie dough, biscuits or dumplings.   It can be served with ice cream, whipped cream or plain.

Since I had purchased a bag of apples at the grocery store a few weeks ago, I decided to make Apple Cobbler this morning.  Using the Mad Dash Fruit Cobbler mix, I only needed to gather the following ingredients: butter, milk and apples.  Well, and lemon juice to sprinkle over the chopped apples so they wouldn’t turn brown!

Preheat the oven to 350 degrees.  You will need a 9 x 13 pan to bake the cobbler in.  Once the oven was preheated, I put the stick of butter (wrapper removed of course) in the pan and put the pan in the oven for just under 2 minutes.  This way, I didn’t have to use  another dish to melt the butter in.  One less dish to wash!   I set the pan on the stove top until I was ready to fill it.

After washing the apples, I chopped them into small pieces.  I did leave the peels on the apples in order to both save time and add some color to the dessert!  As I was chopping the apples and adding them to the bowl, I sprinkled a little lemon juice over them to keep them from turning brown.

Sprinkle the contents of the packet marked Fruit Mix over the chopped up apples and stir. Set the apple/fruit mix mixture aside .

In a mixing bowl, combine the contents of the Batter mix packet with 3/4 cup milk.  Stir till well blended.

Now you are ready to pour the batter into your 9 x 13 pan.  Do not stir the batter once it is in the pan.  Next, spoon the chopped apple/fruit mix mixture over the batter.

Bake for 1 hour at 350 degrees.  Remove from oven and let cool before serving.

If you are going to use frozen fruit to make this cobbler, please make sure the fruit is completely thawed before adding to the pan.  I chose apples this time, but I plan to make it again using a different fruit, possible even a triple berry blend!  I think I will also try it using dried apricots just to see how it works out.
