Looking for a quick & easy muffin mix to help you whip up a tasty snack for the upcoming busy holiday season ? This pecan pie muffin mix is the answer!

With the holidays fast approaching, I am sharing a muffin mix that is very versatile!  This Mini Pecan Pie mix can be mixed up and baked in a mini muffin tin, a regular size muffin tin or even a loaf pan. It can even be used to make Banana Bread!  Just like the name says, the little muffins taste like pecan pie!

The mini muffins are perfect for a holiday get together, a tail gate event or even just as a special treat for your family’s breakfast!  I am planning on making them to serve on Thanksgiving morning.

LET’S START MIXIN’ – THE INGREDIENTS

You will need the following ingredients:

1 packet Mini Pecan Pie Mix by Mad Dash Mixes
2 eggs
1/2 stick butter melted
3/4 cup chopped pecans
pecan halves for garnish
cooking spray with flour added or mini muffin/cupcake liners

Simply follow the directions on the back of the package.

I like to make the mini muffins.  There are two ways to prepare your muffin tin.  The easy way is to use the little mini cupcake liners to line the muffin tin.  A second way is to spray the pan with cooking spray and then dust the pan with unsweetened cocoa.

The second way is a little messier.  I do like to use the cocoa trick in place of using flour.  I also use cocoa to coat the inside of the pan when making Brownie Pizza!

Back to the muffins!

After the muffins have finished baking, cool them in the muffin tin for 10 minutes.  After removing the muffins from the tin, place them on a rack to finish cooling.  Top each muffin with a pecan half for extra garnish!

Mini Pecan Pie Muffins

Equipment

  • mixing bowl
  • measuring cups
  • spatula
  • wooden spoon
  • mini muffin tin

Ingredients
  

  • 1 packet Mini Pecan Pie Mix by Mad Dash Mixes
  • 2 eggs
  • 1/2 stick butter melted
  • 3/4 cup chopped pecans
  • cooking spray with flour added
  • pecan halves

Instructions
 

  • gather ingredients, preheat oven to 350 degrees
    muffin mix and ingredients
  • In a mixing bowl, beat eggs with a fork
    clear glass bowl with beaten eggs
  • Add the contents of the packet of muffin mix to the beaten eggs and mix well
    muffin mix with beaten eggs
  • Add melted butter to the batter in the bowl, mix well
    muffin mix, eggs & butter in glass bowl
  • Add pecans to batter and blend well
    muffin mix with pecans
  • spray the mini muffin tin with the cooking spray. If you don't have cooking spray with flour , you can use a kitchen spritzer with oil and then dust the pan with cocoa.

  • Fill the muffin tins 1/3 of the way full with the muffin batter. Before baking, wipe off excess cocoa dust!

  • Bake muffins at 350 for 6 to 9 minutes. Test with a toothpick . The toothpick will come out clean when the muffins are done
  • Cool for about 10 minutes and then remove from the muffin tin. Finish cooling on a rack

  • After the muffins have finishing cooling, you can add a pecan half to each muffin for a little extra garnish

Notes

instead of using cooking spray, the mini muffin tin can be lined with cupcake/muffin liners.  This helps make clean up a little easier!
