Gather the Ingredients

Before starting to prepare the  lavender shortbread, you will want to be sure you have all of the necessary ingredients.   To make this recipe, you will need unsalted butter, baking powder, granulated sugar, all-purpose flour, and salt.  You will also need dried culinary lavender. Culinary lavender can be found online or in a specialty food store.

After gathering the ingredients, set the butter out and let it reach room temperature.  Place the butter and the powdered sugar into a mixing bowl.  Cream these two ingredients together using a hand mixer, stand mixer or even a wooden spoon.  Cream the ingredients until they are light and fluffy.  This can take 2 to 3 minutes of mixing.  Creaming the butter & powdered sugar together is a very important step.  Mixing until light & fluffy is what helps the finished shortbread had a tender and crumbly texture.

Next sift the flour into the creamed butter & powdered sugar.  Add the dried lavender buds.  Gently fold these two ingredients into the creamed butter & powdered sugar until a dough is formed.  Do not overmix as this can make the shortbread tough.

Wrap the dough in plastic wrap and place in the refrigerator to chill for at least 30 minutes.  Chilled dough is easier to roll out and cut into shapes.

Once the dough has chilled, it is time to preheat the oven to 350 degrees.  Use parchment paper to line a baking sheet.

Lightly flour a wood cutting board and roll out the chilled dough.  The dough should be 1/4 inch thick.  Cut the dough into shapes using a cookie cutter or a knife.

Place the cookies onto the baking sheet.  There should be about an inch between the cookies.  Bake until the edges of the cookies are lightly browned.  This should take about 12 – 15 minutes.  After removing the cookies from the oven, they should cool on the baking sheet for several minutes.  Use a spatula to place the cookies on a wire cooling rack to finishing cooling.

 

 

 

 

Roll and Cut the Dough.

After the dough has chilled, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch. Use a cookie cutter or knife to cut the dough into desired shapes. Place the cut-out shortbread onto the prepared baking sheet, leaving about an inch of space between each cookie. Bake for 12-15 minutes, or until the edges are lightly golden. Allow the shortbread to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve with a cup of tea and enjoy!
