WHAT ARE WE MIXIN’ UP THIS WEEK?
To kick off the New Year, I am sharing 4 of my favorite Mad Dash Mixes* Chicken Soup recipes! Is there anything better than a bowl of hot chicken soup on a blustery winter day?
Since the steps to prepare each of these soups are very similar, I am showing the details for the Chicken Chile Verde and then just adding the recipes for each of the others. For more details about the other three soups, simply click on the link under the picture of the soup!

This quick Chicken Chile Verde recipe is one of my favorites. Chicken Chile Verde is a dish from northern Mexican. All you need is a packet of Chicken Chile Verde Mix from our friends at Mad Dash Mixes and 3 other ingredients! In roughly 40 minutes, you will have a delicious entree to serve your family!
To make this delicious Mexican Stew, you will need the Chicken Chile Verde mix from Mad Dash Mixes, chicken broth or water, diced potatoes and shredded chicken. The recipe calls for 5 cups of water but I used a combination of chicken broth and water, similar to the recipe my friend Leslie prepared on her blog Feet under My Table. I think using chicken broth gives the stew a bit more body or thickness.
The Steps
After combining the seasoning mix with the liquid, diced potatoes & shredded chicken, bring the stew to a boil and then reduce the heat to low and simmer for 20 minutes. It is that simple! Please remember to stir the soup occasionally while it is simmering.
After the stew has simmered for 20 minutes, you are ready to ladle it into a bowl, cup or mug. Feel free to be creative with toppers for your stew. Sour cream, shredded cheese and guacamole are some suggestions. Tortilla chips or corn chips could also be used as a topper. I love to add the blue corn chips for a bit of color.

The stew can be served with a side of rice, black beans or red beans, or warm tortillas. The next time I make it, I am going to serve it with a side of the pineapple salsa to add a bit of spicy sweetness!
Chicken Chili Verde
Equipment
- measuring cups
- saucepan
- wooden spoon
- serving bowl
Ingredients
- 1 packet Chicken Chile Verdi mix by Mad Dash Mixes
- 1 cup cold water
- 4 cups chicken broth
- 1 cup diced potato I used baby gold potatoes
- 2 cups cooked chicken diced or shredded
Instructions
- Combine diced potatoes, shredded chicken and the Chicken Chili Verde mix in saucepan
- Add 5 cups liquid (I used 4 cups chicken broth & 1 cup water). Stir to combine ingredients
- Bring to a boil, stirring occasionally. As soon as the stew begins to boil, reduce heat.
- Simmer over low heat for 20 minutes. Stir the soup occasionally.
- serve in a soup bowl, mug or cup. Top with toppers of your choice

Cheesy Chicken Enchilada Soup
Cheesy Chicken Enchilada Soup with Corn & Garbanzo Beans
Cheesy Chicken Enchilada Soup with Corn & Garbanzo Beans
Equipment
- dutch oven or large saucepan
- measuring cups
- wooden spoon
Ingredients
- 1 packet Cheesy Chicken Enchilada Soup Mix Packet by Mad Dash Mixes
- 1 cup water
- 4 cups whole Milk can use 2 % milk
- 1 can tomato sauce 15 ounce can
- 1 cup cooked, diced chicken canned chicken can be substituted
- 1 cup Mexican blend shredded cheese any shredded cheese of your choice can be used
- 1 can Garbanzo beans, rinsed & drained can use pinto beans with Jalapenos if you want more "heat". Can also use black beans
- 4 cups frozen corn, thawed
- assorted toppings corn chips, tortilla chips, avocado slices, guacamole, sour cream are some suggestions
Instructions
- Add the Soup Mix packet to 1 cup of water in a large saucepan or dutch oven
- then add the tomato sauce and milk to the sauce pan or dutch oven
- Bring to a rolling boil, reduce heat
- drain and rinse the garbanzo beans
- add the chicken, corn and the garbanzo beans and simmer for 15 minutes. Stir occasionally
- remove from heat and add cheese
- prepare an assortment of toppings
- serve in soup bowl with corn chips and avocado toppings and your choice of toppings

Chuckwagon Soup with Smoked Sausage & Chicken

Chuckwagon Soup with Smoked Sausage, Chicken and Beans
Equipment
- dutch oven or large saucepan
- measuring cups
- wooden spoon
Ingredients
- 1 packet Chuckwagon Soup Mix Packet by Mad Dash Mixes
- 5 cups water
- 1 can diced tomatoes do not drain
- 16 oz smoked sausage, sliced
- 2 cups cooked, diced chicken
- 1 can pinto beans, drained can use pinto beans with Jalapenos if you want more "heat"
Instructions
- Add the Soup Mix packet to 5 cups of water in a large saucepan or dutch oven
- then add the tomatoes, drained pinto beans, diced chicken and sliced smoked sausage to the saucepan
- Bring to a rolling boil, reduce heat and simmer for 15 minutes. Stir occasionally
- serve in soup bowl

Equipment
- dutch oven or large saucepan
- measuring cups

Ingredients
- 1 packet Tortilla Soup Mix Packet by Mad Dash Mixes
- 5 cups water
- 1 can diced tomatoes 15 ounce can
- 1/2 can corn drained
- 2 cups cooked, diced chicken canned chicken can be substituted (optional)
- 1 cup zucchini diced (optional)
- assorted toppings shredded cheese, corn chips, tortilla chips, avocado slices, guacamole, sour cream are some suggestions
Instructions
- Add the Soup Mix packet to 5 cups of water in a large saucepan or dutch oven
- then add the diced tomatoes & corn to the saucepan or Dutch oven
- If adding chicken and/or zucchini, add it now. Stir well
- Bring to a rolling boil, stirring occasionally. Reduce heat
- Simmer for 15 minutes. Stir occasionally
- prepare an assortment of toppings
- Blue Corn Chips, guacamole & shredded cheese make great toppings
- serve in soup bowl with your choice of toppings
