Electric Mixer, preferably with a paddle attachment. I used an electric mixer with regular beaters.

Ingredients
1stickunsalted buttersoftened at room tempuratur
1/2cupsugar
3eggs
1teaspooonbaking powder
1/4cupmilk
1/2tspbaking soda
3cupsflour
2teaspoonsvanilla extract
Instructions
Preheat oven to 400 degrees
Line baking sheets with parchment paper or silicon mats
Using the electric mixer, cream the butter & sugar together until light & fluffy. this will take about 3 minutes with the electric mixer.
After the butter & sugar is light & fluffy, add the eggs, milk & vanilla and mix until all ingredients are combined
Add all the dry ingredients to the batter and blend well
resulting dough will be soft but not sticky
use a tablespoon measuring spoon to scoop out the dough
roll the tablespoon of dough into a rope
twist into a knot and place on the parchment lined baking sheet
Bake at 400 degrees for about 10 min. Biscotti cookies will be lightly brown on the bottom
allow to cool, once cool ice and decorate

Recipe will make approximately 3 dozen soft biscottiThe parchment paper made clean up a breeze! The total time estimate does not include the time for the cookies to cool before icing them. I think it took about 20 to 25 minutes for my cookies to cool before I iced them.
