What Are Herbal Condiments
Herbal jellies, honeys, sugars and vinegars are examples of herbal condiments. Herbal condiments serve as an interesting way to add herbs to your cooking.

Herbal condiments would make great gifts for the any gift giving occasion. They can be prepared in advance. Who wouldn’t love to receive a gift basket full of herbal condiments for their birthday , Mother’s Day or even a bridal shower?
Herbal Sugars
Herbal sugars are my personal favorite! They are super simple to make! Herbs that blend well with sugar include the mints, lavender and rose geranium.
To make herbal sugar, simply layer the dried herb of your choice in white table sugar. Place in a covered container and let set for several days. The herbal sugar can be used to flavor cookies, cakes and frostings. They can also be used in ice tea, lemonade or even coffee!
Blend Your Own Lavender Sugar
To make your own lavender sugar, you’ll need a few simple supplies. The main ingredient is sugar.
You can use either granulated or caster sugar. Castor sugar is granulated sugar that has been finely ground. It is gritty like granulated sugar and not as powdery as confectioner’s sugar or powdered sugar.
You’ll also need dried lavender buds. Culinary lavender blossoms can be purchased online. Just be sure to read the description to be sure you are getting food grade or culinary quality lavender.

Another supply you will need is an airtight container to store the lavender sugar. I have used a mason jar or even a recycled glass jar to store the herbal sugar.
In order to keep the pieces of dried herbs out of your final product (especially beverages), use a shaker type container with holes big enough for the sugar to sift thru but small enough so the dried herbs don’t. I use a vintage shaker of course!
One caution: this is one recipe where you do not want to substitute fresh herbs for dried. Fresh herbs will draw moisture and make your sugar a clumpy mess!
If you are using lavender blossoms that you have grown yourself, you need to make absolutely sure that the blossoms are totally dry. Using a paper towel, gently squeeze the lavender blossoms to remove excess moisture. Spread the lavender flowers on a tray and let them air dry for a few days.
Working with the dried lavender blossoms, simply layer the sugar and the lavender in a container. Cover the container and let it age for a few days to allow the lavender essential oils to flavor the sugar.
Lavender sugar should be stored in an airtight container. Keep the prepared lavender sugar in a cool, dry location. Avoid storing them in the sun. The lavender sugar can be kept for up to 2 months. You can also store the prepared lavender sugar in the freezer to help extend the life of the herbal sugar.
Don’t be afraid to substitute lavender sugar for regular sugar in your recipes!
To enhance the appearance of your lavender sugar , edible glitter can be added. Edible glitter can be purchased wherever cake decorating supplies are sold. It is used sparingly. Just a tiny bit will add a bit of shimmer to your creations!
