As the weather gets colder, I love to serve hearty soups. This Chicken Wild Rice soup is one of my favorites! It is quick to prepare.
Prepare The Wild Rice
The most time consuming part of the process is going to be cooking the wild rice. One cup of uncooked wild rice will make 3 – 4 cups of cooked wild rice. Since the recipe calls for 1 cup of cooked wild rice, I freeze the remaining cooked wild rice in 1 cup portions so I have some ready to go the next time I want to make this soup or another recipe calling for cooked wild rice.
After measuring out 1 cup of uncooked wild rice, place the wild rice in a strainer and rinse the rice three times by running cold water over it. Once the rice is rinsed, add it to a heavy saucepan containing 3 cups boiling water . Reduce the heat and allow the rice to simmer for 35 minutes or longer if necessary. Drain any remaining liquid.
The wild rice is cooked when the dark color of the rice becomes lighter and the rice is no longer shiny. The pieces of rice will start to split open as well. If you prefer a chewier wild rice, cook the rice for a shorter amount of time.
Now we are ready to make the soup!
Kim's Quick & Creamy Chicken Wild Rice Soup
Equipment
- saucepan
- measuring cups
- wooden spoon
Ingredients
- 1 cup cooked, cubed chicken
- 3 T. margarine or butter
- 3 T. flour
- 1/2 medium onion, chopped
- 10 3/4 ounces chicken broth
- 2 cups Milk
- 1 cup cooked Wild Rice
Instructions
- Melt the margarine or butter in the saucepan
- Add onions and saute until tender
- Stir in the flour and add salt & pepper if desired. Stir the flour, onions and seasonings until the flour is slightly puffy.
- Add the chicken broth and milk. Stir until thickened.
- Add wild rice and the chicken
- simmer until the wild rice and chicken are heated through.
- serve
