With Spring finally here and Easter just around the corner, I have been looking for quick & easy festive dessert ideas! I wanted to see how to turn no bake cheesecake into a parfait! Since my friends at Mad Dash Mixes have several different flavors of No Bake cheesecake mixes available, I decided to try their Key Lime Pie no bake cheesecake this week.
I can’t wait to show you how easy it is to make cheesecake into a parfait!
I came up with a way to turn the graham cracker crust into a pecan & graham cracker dessert crumble. This crumble is so simple! In addition to using it to prepare the cheesecake parfaits, you can also sprinkle it over Greek yogurt!
If you have some cheesecake filling left over, simply serve that as a dip with cookies.
Let’s Get To Mixin’
Pictured above are the ingredients you will need in order to make the Key Lime No Bake Cheesecake Parfaits!
Ingredients:
2 8 oz Softened Cream Cheese (I used the lower fat option)
1 8 oz Cool Whip or similar whipped topping
1 Mad Dash Mix No Bake Key Lime Cheesecake Mix packet
8 sheets of graham crackers
3/4 cup chopped pecans
3 tablespoons melted butter
The Mixing Process
You can use an electric hand mixer, stand mixer or even mix the ingredients by hand. I decided to use my Mom’s vintage Hamilton Beech Stand Mixer.
After the cream cheese has softened, add it to your mixing bowl. Then add the Cheesecake Mix. Blend until the cream cheese is very creamy.
Next you will fold in your Cool Whip or other whipped Topping.
After you have folded in the whipped topping, the cheesecake filling is ready.
Preparing the Parfaits
Once the Cool Whip is folded in, you are ready to make the parfaits. Making the crumble for the parfaits is super easy!
Put the 8 sheets of graham crackers in a gallon size plastic bag and close securely. Using a rolling pin, crush the crumbs as finely as you can. Put the graham cracker crumbs in a mixing bowl. Add the crushed pecans and the melted butter. Stir until the crumbs are covered.
Place about an 1/8 of a cup of the crumbs in the bottom of a parfait glass or footed dish. Use a spoon or a spatula to cover the graham cracker/pecan crumble.
How to Decorate the Parfaits
Now you are ready to decorate them. I topped each parfait with whipped cream and nonpareils and a little more crumble. You could use chocolate sprinkles as well.
After decorating the cheesecakes, place them in a covered container in the refrigerator or cover with plastic wrap and chill for several hours before serving.
Ready to Serve
When making 6 cheesecake parfaits, the leftover prepared no bake cheesecake can be served in a bowl as a dip for fresh fruit or cookies.
Key Lime No Bake Cheesecake Parfaits
Equipment
- mixing spoon
- measuring cup
- mixing bowl
Ingredients
- 16 oz Cream Cheese, Softened low fat cream cheese can be used
- 8 oz Cool Whip other brands of whipped topping can be used
- 8 sheets graham crackers
- 1 packet Key Lime Pie No Bake Cheesecake Mix by Mad Dash Mixes
- 3/4 cup chopped pecans
- 3 tbsp melted butter
- nonpareils for top of cheesecake if desired
- whipped cream for top of cheesecake if desired
Instructions
- Add softened cream cheese and the Cheesecake Mix in a bowl. Blend until Creamy
- Fold in Cool Whip or other whipped topping
- prepare crumble or graham cracker/pecan crumbs
- crush crumbs and pecans and then add melted butter. stir till crumbs are well coated
- place about 1/8 cup of crumble in bottom of parfait dish or footed dish
- decorate with nonpareils and sanding sugar
- cover and chill for at least 3 hours before serving, place excess cheesecake filling (if any) in a bowl, cover and refrigerate
- use the left-over filling as a dip for fresh fruit or cookies
